Baked Rice Dressing
1/2 lb. lean ground pork * 1 lb. ground dressing mix or ground beef * 1 cup raw rice * 1 can onion soup * Salt & Pepper to taste * 1 pod garlic, minced * 1 can cream mushroom soup * green onions * 1 medium onion, chopped * 2 Tbsp. Bell Pepper, chopped * 1/2 cup celery, chopped * 1/2 cup parsley, chopped
Mix ground meat with raw rice. Add all other ingredients and season to taste. Place in heavy casserole dish, cover with tight lid and bake at 325º for 2 hours.

Cornbread Dressing
Cornbread: 1 1/2 cups cornmeal * 3/4 cup flour *
3/4 tsp. salt * 3 tsp. Baking Powder * 1 Large Egg * 1 cup Milk * 2 Tbsp.
vegetable oil
Dressing: 1 - 1 1/2 lb. ground beef * 1 tsp. salt * 1/4 tsp. black
pepper * 1 clove garlic, minced * 1/4 tsp. red pepper * 2 Tbsp. margarine * 1
small onion, chopped * 2 Tbsp. Bell Pepper, chopped * 1/2 cup chopped Celery * 1
can Mushroom Soup * 3 cups chicken broth
Make cornbread. Bake in a well greased or oiled pan for 30-40 minutes or until lightly browned. Crumble and set aside. Cook onion, bell pepper, celery, garlic in 2 Tbsp. margarine. Add to cornbread. Brown beef in heavy pot; add salt and pepper and cook about 30 minutes on low heat. Mix meat, cornbread, seasonings, soup and broth together. Bake in buttered casserole dish at 350º for 45 minutes. Makes 10 servings.

Pecan, Rice and Crawfish Dressing
1 medium onion * 1 celery rib * 1 green bell pepper * 1 red bell pepper * 1 pound lean ground beef * 2 garlic cloves, minced * 2 (16-ounce) packages frozen peeled, cooked crawfish tails, thawed * 2 cups cooked long-grain rice * 1 cup chopped pecans, toasted * 1/4 cup butter or margarine, cut into pieces * 1 small bunch green onions, chopped * 2 tablespoons Creole seasoning * 1/2 teaspoon pepper * chopped fresh parsley
Chop first 4 ingredients. Cook vegetables, ground beef,
and garlic in a Dutch oven over medium-high heat 10 minutes, stirring until beef
crumbles and is no longer pink. Stir in crawfish and next 6 ingredients;
cook 3 minutes or until thoroughly heated. Spoon mixture into a lightly
greased 13x9-inch baking dish. Bake at 350º for 25 to 30 minutes or until
lightly browned. Sprinkle with parsley.
Yield: 8 to 10 servings.
Prep: 25 minutes
Bake: 30 minutes
